This easy roasted sweet potato recipe is an easy side dish, kid friendly, and family favorite. These roasted sweet potatoes make a great addition to proactive meal prepping and are a satisfying for a post exercise recovery meal. This recipe is great when straight from the oven or make delicious leftovers when choosing to batch cook. This recipe is Whole30, Paleo, Gluten Free, and AIP compliant.


4-6 Sweet Potatoes

Avocado Oil


1) Turn oven to 425 degree; convection oven cooks quickest!

2) Wash sweet potatoes. Diced or slice sweet potatoes.

3) Place diced or sliced sweet potatoes on sheet pan.

4) Rub sweet potatoes with avocado oil.

5) Place sweet potatoes in oven. Set timer for 30 minutes. Every 30 minutes mix sweet potatoes until cooked.

6) Serve and enjoy!

PRO TIP : The longer in the oven, the diced sweet potatoes can be used as delicious gluten free croutons. Also less time in the oven, or the more mushy the sweet potatoes, create a wonderfully favored mashed sweet potato dish! Just simple mash, and enjoy!
